TimeSpirit has been developed in partnership with the famed Roca Brothers. They are behind one of the world’s most acclaimed restaurants, El Celler de Can Roca in Spain, which is celebrated globally for creative cuisine, combining deep local roots with innovation and artistic presentation. Discover how this is embodied in the tasting menu served at TimeSpirit, which is a culinary exploration of The Macallan’s story.

Each dish is curated with seasonal, local produce, either gathered from The Estate or sourced from local suppliers, working in the rhythm of the natural seasons.

A carefully considered drinks menu accentuates the experience, and you may wish to choose paired wines or paired whiskies, or our hybrid pairing which sees each course accompanied with a drink from a selection of The Macallan whisky, Valdespino sherry or wine.
