TimeSpirit Celebrates Its First Anniversary

In its inaugural year, TimeSpirit has established itself as a standout culinary destination at The Macallan Estate in Speyside, serving over 41,000 plates to diners from California to Copenhagen.

In collaboration with the world-renowned Roca Brothers, famed for their three Michelin star restaurant El Celler de Can Roca, The Macallan launched TimeSpirit, on 30th October last year.

This permanent dining concept within The Macallan Distillery offers timeless experiences that connect whisky with the world of gastronomy. Flavours synonymous with The Macallan Estate are interpreted through dishes that are delighting diners, earning praise from guests and critics.

The tasting menu features fresh, locally sourced and sustainable ingredients, some which are sourced from The Macallan Estate. Each dish can be expertly paired with The Macallan, fine wines or Valdespino Sherry.

Gillian Swan, Estate Experience Manager said: “Through TimeSpirit, we are now able to offer an enriched culinary experience to The Macallan whisky enthusiasts, as well as our local community. The last 12 months has been an incredible journey, with TimeSpirit igniting desire to visit The Macallan. The number of repeat guests we are seeing is testament to how great an experience they have when they are here with us.”

The TimeSpirit dining room features an open kitchen and is set within The Macallan Distillery. Designed by architect David Thulstrup, the space blends elegance with natural beauty, enhancing the storytelling of The Macallan. It offers stunning views of the surrounding countryside.

TimeSpirit has drawn praise for its innovation, cultural fusion, and commitment to local sourcing, all while reflecting The Macallan’s dedication to craftsmanship and hospitality.

Cost: The six course lunch tasting menu is £75 per person. The nine course dinner tasting menu is £105 per person.
